Chocolate peanut brownie
Serves 8
Ingredients
1/2 cup melted butter, melted, plus more for greasing skillet
1 cup caster sugar
1/4 cup cocoa powder
1/4 tsp salt + extra for serving
1 tsp vanilla extract
3 large room temp eggs
1 cup all-purpose flour
180g block of dark chocolate - chopped into smaller chunks
1/2 cup roasted unsalted peanuts
Serve with some thick Greek yoghurt and a drizzle of extra virgin olive oil
Instructions
Preheat the oven to 175 fan bake.
Using some baking paper and butter grease the 25cm iron skillet or desired baking tin.
Whisk the melted butter, sugar, cocoa, salt and vanilla together in a large bowl.
One at a time, crack the eggs into the mixture, whisking well before adding the next egg.
Sift in the flour, gently fold, then stir in the chopped chocolate and peanuts.
Pour the mixture into the skillet. Using a spatula, smooth the batter so it’s even, sprinkle some extra sea salt over the top and then place into the oven and bake for 28 minutes.
Remove the brownie from the oven, let it sit for a few minutes then top with a big dollop of greek yoghurt and a drizzle of extra virgin olive oil.
Serve immediately and ENJOY!
