Herby beef koftas with a couscous salad

Serves 4-5

Ingredients

1 cup couscous

Koftas:
1kg beef mince
1 tbsp cumin & smoked paprika
1 tsp cinnamon & turmeric
1 cup parsley – finely chopped
1 large carrot – grated
¼ cup raisins
¼ cup chopped toasted almonds or pine nuts
4 large garlic cloves – minced

Yoghurt dressing:
1 cup Greek yoghurt
1 garlic clove – minced
1 tbsp dried dill
1 tbsp sumac
1 tbsp extra virgin olive oil

Couscous Salad:
1 cup parley – finely chop
1 cup mint – finely chop
1/2 cucumber - diced
Large tomato or 1 punnet cherry toms- diced
1/2 red onion - diced
1/4 red cabbage - shaved
2 tbsp extra virgin OO
Juice of one big juicy lemon

Instructions

Cook the couscous as per the packet instructions.

Mix the kofta ingredients together in a bowl. Roll into 20 koftas.

Chop the salad ingredients and add to a large serving bowl. Once the couscous has cooled stir this in.

Mix the yoghurt ingredients together. Set aside.

Fry the Koftas in a large pan on a medium heat with lots of oil, turning on all sides until cooked through. It wont take too long maybe 5 mins or so.

Plate everything up and enjoy!
