A Meatball, Eggplant, Kumara, Tomato Bake

Ingredients

2 medium-sized golden kumara
1 large eggplant
3 cloves of garlic
Handful of Italian parsley
1 can cherry tomatoes
½ cup olives
½ pack of superb herb oregano
Pinch of chilli flakes
½ block of feta

Meatballs
1 kg Beef mince
Pine nuts ¼ cup - chopped
½ pack Oregano (Superb herb) - finely chopped
Big handful of coriander (substitute for parsley If you don’t like coriander)
1 egg
1 tbsp sumac
1 tbsp cinnamon
1 small red onion - finely diced
4 cloves garlic - crushed
1cup breadcrumbs

Instructions

Heat oven to 200 fan bake.
Slice the Kumara and eggplant thinly (about half a cm)
Lay on a baking tray,  drizzle with oil, season and bake for 20 minutes.

Combine everything for the meatballs in a bowl, and then roll roughly 14 large meatballs.
sear in a pan on high to get some colour (you can miss this step if you are time-poor)
In a large pan fry the garlic and parsley, add the can cherry tomatoes, oregano and olives & simmer for 2 mins.
By this point the veges will be done, place them into the pan with tomato sauce ( roughly later them) now add the meatballs on top, sprinkle with lots of feta and bake for 12-15 mins or until cooked to your liking.
