Creamy bacon & spinach pasta

Serves 4

Ingredients

1x 250g packet of @freedomfarmsnz rindless eye bacon
400g Rigatoni dried pasta
1 medium shallot – thinly sliced
3 garlic cloves – chopped
1 red chilli – thinly sliced
Zest one lemon
1 tsp smoked paprika
2 tsp dried oregano
1 & a 1/2 cups of ricotta
Juice of one lemon
250g of baby spinach
¾ cup – 1 cup of pasta water
Parmesan and copped parsley to serve

Instructions

Boil a large pot of salted water. Add the pasta and cook as per the packet instructions.

Chop the bacon into small pieces and fry them in a pan until it’s nearly crispy. Add the shallots, garlic, lemon zest, chilli, paprika & oregano.

Stir around until the shallots start to soften, add the spinach & lemon juice and Sautee until the spinach wilts.

Gently fold through the ricotta & season well.

Drain the pasta reserving 1 cup of pasta water, add the pasta to the sauce and pour in the pasta water.

Mix it all together well then sprinkle some chopped parsley & lots of parmesan on top and enjoy x
