Creamy salami pasta

Serves 4

Ingredients

300g salami – into bite-sized pieces
1 red onion – diced
6 large garlic cloves
3 large roasted red peppers – from the jar - sliced
1 tsp chilli flakes
1 tbsp sugar
1 tsp paprika
1 can cherry toms
½ cup ricotta
½ cup crème fraiche
¾ parsley – chopped
400g orecchiette pasta

Instructions

Ready a large pot of boiling salted water.

Fry the salami in a splash of oil, until crispy. Take the salami out of the pan to rest but leave the oil.

Fry the onion for a few minutes in the oil, and add the garlic and paprika for another 2 minutes.

Add the canned cherry toms, sugar and chilli. Now through in the peppers, season well and let it all simmer.

Get the pasta cooking. Reserve ½ a cup of pasta water. Add the salami back to the pan, kill the heat and mix in the crème fraiche, ricotta and parsley.

Stir through the drained pasta and pasta water and serve immediately.
