Dan Dan beef Noodles

Serves 4

Ingredients

Sauce:
1/3 cup chilli oil (i love Tsunami Mami)
1 tbsp crunchy peanut butter
1 tbsp tahini paste
1 tsp sesame oil
3 garlic cloves - minced
3 tbsp soy sauce
1 tbsp Chinese black vinegar
1/2 tsp Sichuan dried pepper

400g beef mince
1/4 tsp Chinese five spice
1 tbsp soy sauce
1 tbsp Chinese Chinkiang vinegar
1 heaped tbsp hoisin sauce

500g pack Lian Huat fresh noodles
1 pack bok choy – slice the leaves into halves – lengthways
2 spring onions (green parts sliced)

Instructions

Mix together the sauce ingredients and set it aside.

Ready a large pot of water.

In a hot wok add a good glug of oil, brown the mince and add in the five spice.

Now add the noodles to the boiling water. Once the mince is nearly cooked add in the soy, and Chinkiang vinegar plus the hoisin, stir it around then turn down the heat.

When the noodles have a minute to go add in the sliced bok choy.

Drain and add to the mince and then pour over the sauce. Stir through for a couple of minutes and serve it immediately.

Top with spring onions and some extra chilli oil.
