HUNGOVER but make it healthyish - Deconstructed won ton soup

Serves 2 - Adios Hangover

Ingredients

Thumb sized piece of ginger - chopped
3 garlic cloves - halved
Half a red onion - halved
1 Litre of chicken stock
1 tbsp soy sauce
1 tbsp rice wine vinegar
1 tsp sesame oil

Meatballs:
250g pork mince
1 tbsp diced chives or coriander stalks
1 tbsp minced ginger
2 garlic cloves - minced
Pinch of white pepper
1/4 cup panko
1 egg
1 tsp soy sauce

1 large bok choy - chopped
1 large spring onion / thinly sliced
12 wonton pastry squares - cut into quarters
Shit loads of chilli oil to serve

Instructions

In a large saucepan, add some oil and turn the heat to medium, fry the ginger, garlic and onion until lightly coloured. Add half the stock, simmer for a minute. Then add the rest of the stock, soy sauce, sesame and vinegar - let it bubble for 10 minutes.

Mix the meatballs together in a bowl. Set aside.

You can discard the ginger, garlic and onion from the stock but I would personally keep it in there.

Dust the wonton wrappers with a sprinkle of corn flour.

Using a tablespoon, spoon the meatball mix into the soup. Simmer for 4-5 mins.

Add the bok choy, half the spring onions and won ton pastry. Simmer for a further minute. Continuously stirring.

Garnish with lots of spring onion and chill oil.
