Hungover… but make it healthyish - Chicken Pad See Ew

Serves 1-2 grubs

Ingredients

Traditionally made with thick rice noodles which I unfortunately didn’t have. This is a 15 minute meal that even the most dusty pup should be able to manage cooking. Optional, but highly recommended would be to add a good chilli oil on top - the heat might numb the pain lol.

Sauce:
2 tsp sugar
2 tsp white vinegar
2 tsp dark soy sauce
2 tbsp oyster sauce
1 tbsp soy sauce

3 chicken thighs - sliced into bite sized pieces
4 garlic cloves - chopped
1/2 tsp white pepper

2 eggs - scrambled
200g thick rice noodles
6 stems broccolini - roughly chopped

Garnish (optional) - spirng onions

Instructions

Whisk the sauce ingredients together. Set aside.
Ready a wok with oil, add the chicken, garlic and white pepper. When the chicken is just about cooked add the broccolini, continuing to stir for a minute or so.

Push the chicken & broc to the side, pour in the egg, leave for 30 seconds, stir it around until just cooked then fold it through the chicken. Pour everything from the wok into a bowl. Set aside.

If the rice noodles are dried, cook them as per the packet instructions.

Add a good splash of oil to the wok, ensuring the heat is on high and the wok is super hot, add the noodles and sauce. Stir well to ensure the noodles are coated well. After a minute or so the sauce will start to thicken.

Add the chicken & broc back to the wok and toss everything together for a 30 or so seconds.

Serve immediately and HOOVER.
