Mexican meatball bowls

Serves 4

Ingredients

1 cup brown rice

500g beef mince
¼ cup chopped jalapenos
2 garlic cloves – minced
½ tbsp paprika
½ tbsp oregano
½ tbsp cumin
Zest of 1 lime
Salt & Pepper

1 large zucchini
1 red pepper
½ white onion – thinly sliced
2 limes
1 Avocado
1 fresh green pepper
Handful of chopped parsley

Sour cream to serve

Instructions

Cook the rice.

Mix together all of the meatballs ingredients then roll into balls. Slice the zucchini, pepper & onion.

Make the guacamole – chop the avocado, thinly slice the green chilli & the parsley then gently fold it together with the juice of one lime.

Heat one large pan, add some oil then fry the meatballs for a couple of minutes on each side until cooked (you will need to cook the meatballs in batches).

While these are cooking heat a second pan or wok with some oil and fry the onion for a couple of minutes, then add the peppers, zucchini & the juice of one lime.

Evenly distribute the meal into three bowls with a good dollop of sour cream and enjoy.
