Quick beef summer stir fry

Serves 4

Ingredients

2 tbsp ginger – minced
2 lime leaves – very finely diced
4 garlic cloves – finely diced
500g beef mince
½ cup spring onions – green part – thinly sliced
2 tbsp hoisin sauce
1 tbsp fish sauce

2 large courgettes – julienned
2 baby cucumbers
1 red chilli – thinly sliced
2 packs udon noodles
1 cup of peas
Handful of coriander to serve

Sauce:
Juice of 1 lemon
4 tbsp fish sauce
1 tbsp chilli oil
2 tsp sugar
2 tbsp hoisin

Instructions

Ready a saucepan with boiling water.

Mix the first 7 ingredients well together in a bowl.

Julienne the zucchini, slice the chilli and cucumbers and set aside.

Mix together the sauce ingredients.

In a large pan add 2 tbsp of oil, once the pan is piping hot add the beef. Season with white pepper and stir everything around so the beef is nice and browned.

Get the udon noodles cooking in the saucepan, when they have one minute or so to go on the timer add the peas. Drain well.

Using a large platter, add half the zucchinis to the bottom of the plater. Then add the noodles and the rest of the zucchinis.

Tip the beef over the noodles, drizzle the sauce over the top, then top with the baby cucumbers, extra chilli and chopped coriander.

Enjoy immediately! I also add some baby cos lettuce to the dish which is optional.
