Salmon and grapefruit soba noodle salad

Serves 2 - 3

Ingredients

100ml Ruby red grapefruit juice (basically 1 grapefruit)
1 tbsp maple syrup
1 tbsp soy sauce
1/4 red onion - thinly sliced

2 pieces of salmon
2 tbsp soy sauce
2 tbsp maple syrup
1cm piece of grated ginger

2 bok choys
One bunch of soba noddles
1 Ruby red grapefruit (slice out the segments)
1 avocado - sliced
Chilli - sliced
Sesame seeds to garnish

Instructions

Turn the oven to grill, marinade the salmon and set it aside.

Chop the bok choy & slice the grapefruit & avocado.

Make the dressing, with the soy, maple & grapefruit juice. Thinly slice the onions and mix them into the dressing and set aside.

Cook the salmon, on a baking tray for 6-7 minutes.... or pan fry it (up to you)Whilst the salmon is cooking, cook the soba noodles for 7 minutes, when there is 1 minute to go add the bok choy & cook for a further minute.Drain and set aside.

Divide the noddles into 2-3 bowls, top with the cooked salmon, then add the sliced avocado & grapefruit on the side and pour over the dressing, garnish with the chilli & sesame seeds.
