Spicy beef stir fry

Serves 3

Ingredients

1 cup of brown rice
2 cups of water
1 head large of broccoli

500g mince
½ tsp Chinese 5 spice

Sauce:
1/4 cup chilli oil (bits of chilli and all)
1.5 tbsp crunch peanut butter
1 tbsp tahini
½ tbsp sesame oil
3 tbsp soy sauce
1 tbsp Chinese black vinegar
2 tbsp hoisin sauce
3 garlic cloves – minced

To serve: 1 large spring onion thinly sliced( green part only). Big handful of chopped coriander & toasted sesame seeds

Instructions

Get the rice cooking as per the packet instructions. Put the lid on and simmer on low.

Finely dice the broccoli – stalk and all. If you can’t be bothered through it in a blender and whizz together until it's finely chopped.

Mix the sauce ingredients together. When the rice has five minutes to go stir in the broccoli and put the lid in.

In a hot wok add a good drizzle of oil and then the beef mince, break it up using a wooden spoon. Add the Chinese five spice. Cook for 3 minutes.

Then pour in the sauce & most of the spring onions, mix it all together for a about 2 – 3 minutes.

Sprinkle the remainder of the chopped spring onion, coriander and sesame seeds over the top. Enjoy immediately
