Chicken, bacon, mushroom tomato bake topped with mozzarella

Serves 4 - 5

Ingredients

6 garlic cloves - sliced
1 white onion - diced
2 tbsp fresh Rosemary - finely diced
250g brown mushrooms - quartered
250g packet of bacon - diced
2 cans cherry or chopped tomatoes
1 tbsp balsamic glaze
Handful of fresh basil
8 chicken thighs - boneless
1 large ball of mozzarella - sliced into 8 pieces

Instructions

Heat the oven to 180 fan bake.

Fry the bacon until slightly crispy. Then add the onion and simmer for 5 mins adding oil if required. Add the rosemary and garlic. Stir well and season with pepper.

Add the two cans of tomatoes, mushrooms and basil leaves. Set aside to simmer away.

I’m a large pan brown the chicken thighs on both sides. Put into a baking dish, pour over the sauce and top the chicken pieces with the sliced mozzarella. Season with pepper and salt.

Bake for 25-30 mins until cooked.

Serve with fresh focaccia and a big green salad.
