Chicken & butter bean bake

Serves 4-5

Ingredients

1 can of cherry tomatoes
1 can of butter beans - drained & rinsed
1 tbsp Italian herb mix
5 garlic cloves - crushed
1 red onion - diced
1/2 cup chopped parsley
1/2 a cup of sun dried tomatoes - chopped
2 tbsp capers
Pinch of chilli flakes
1 ball of fresh mozzarella
8 pieces of boneless chicken thighs
Basil to serve

Instructions

Heat oven to 200 fan bake.

Dice the onion, garlic & chop the parsley.

Fry the onion in a large oven-proof pan, with some oil and salt until soft, now add the garlic & stir.

Add the sun-dried toms, capers, half the parsley, chilli, beans, Italian herbs and canned toms.

Give it a good mix around for a minute then add the chicken thighs. Make sure to mix everything well so the chicken is coated.

Break up the mozzarella into chunks and scatter over the chicken.

Bake for 25-30 mins or until cooked.

Top with the rest of the parsley and the basil. Enjoy!
