Easy peanut chilli chicken bowl

Serves Serves 3

Ingredients

3 tbsp tamari
2 tbsp peanut butter
1/2 tbsp chilli oil - ideally with chunks
Juice of 1 juicy lime
1 tsp garlic powder
450g chicken thighs - boneless

1 cup Brown rice
Broccoli
Shaved cabbage
Garnish: spring onion, toasted sesame & poppy seeds

Instructions

Cook the rice as per the packet instructions.

Pre heat the oven to 200 fan bake, mix the first five ingredients together. Add the chicken, season with pepper.

Place the chicken onto a lined baking tray (I like to have the smooth side facing down)

Bake for 16-18 mins depending on the size or until cooked.

Divide the rice into 3 bowls, slice the cooked chicken, then add it to the bowls. Drizzle the sauce over the top and add in as much cooked broccoli and shaved cabbage as your heart desires.

Garnish with seeds and spring onions.
