Pesto meatball pasta with broccolini

Serves 4

Ingredients

500g pork mince(could sub for other meat)
½ cup grated parmesan
2 garlic cloves – minced
Zest of 1 lemon
1 egg
½ cup toasted pine nuts
1/2 cup finely chopped Italian parsley

1 cup pesto (plus extra for drizzling)
250g broccolini - cut in half
150g spinach
300g spaghetti

Instructions

Preheat oven to 200 fan-bake. Ready a large pot of salted boiling water.

Mix the pork mince, parmesan, garlic, zest, egg, pine nuts and parsley in a bowl. Season well.

Get the spaghetti cooking in the boiling water. Cook as per the packet instructions.

Roll the pork into balls, it should make 16 in total.  Place the balls in a lined baking tray, drizzle with oil and bake for 13 minutes.

When there is 1 minute left to go on the pasta, add the broccolini.

Drain the pasta, add it back to the pot, stir through the spinach and 1 cup of pesto.

Pour onto a serving platter and add the meatballs. Drizzle over some extra pesto if you like and a little chilli!
