Tomato, chicken and potato tray bake

Pre heat the oven to 200 fan bake.
Chop the potatoes, drizzle with olive oil, Italian herbs and Salt & pepper. Bake for 45 mins – 1 hour.
Fry the onion and paprika in some oil. Simmer for a few minutes. Add the garlic and stir well.
Add the olives, capers, tomato paste, copped tomatoes plus half a can of water and the fresh thyme. Let that simmer away for a few minutes.
Coat the drumsticks with the oregano, garlic powder, chilli oil and salt & pepper.
Once the potatoes are cooked, poor over the tomato sauce. Top with the chicken drumsticks. Drizzle with a little oil.
Bake for 25-30 mins until cooked. Top with lots of grated parmesan and some dollop of fresh ricotta.
Enjoy it with a big green salad on the side.
