Chicken rendang tray bake

Serves 4

Ingredients

1 large lime leaf - finely diced
¼ cup minced ginger – fresh
4 large garlic cloves – diced
Ayam rendang curry paste
1 can of coconut milk
1 lime – chopped
1 heaped tbsp crunchy peanut butter
10 chicken drumsticks
White pepper
Garnish with coriander and serve with rice and some green veggies

Instructions

Preheat the oven to 200 fan bake.

Dice the garlic and lime leaf, and mince the garlic.

In a large pan fry the garlic, ginger and lime leaf in a good glug of oil for a few minutes.

Add in the curry pasta and ¼ of the coconut milk, stir around and simmer for a minute.

Now add the remaining coco milk and peanut butter and chopped lime.

Place the drumsticks in a baking dish so they are snug, sprinkle of the white pepper.Pour over the curry sauce, throw in the oven and bake for 30 minutes or until cooked.

Turn the oven to grill for a few minutes to crisp up the top of the chicky.
