Harissa chicken, Parmesan and pea Pattie’s

Serves 2 - 3

Ingredients

550g chicken mince
1/4 cup harissa paste
1/2 cup grated Parmesan cheese
1/2 small red onion- very finely diced
4 garlic cloves - minced
1/4 cup fresh thyme leaves
1 cup peas - defrosted Under hot water
2 - 3 tbsp cornflour
1 egg

Instructions

Run the peas under hot water, then Pat them dry with paper towels. Mix everything together in a bowl. Season with salt and pepper.

Roll then into Pattie’s. Ready a pan over a low to medium heat with oil.
Fry the Pattie’s on both sides, put a lid over the pan.

Serve with mayonnaise and sumac over the top and a big green salad and some Kumara chips.
