Harissa chicken skewers with a yoghurt sauce

Serves 4-5

Ingredients

600g chicken thighs
2 large red peppers
1 red or brown onion
Zest of 2 lemons
3 garlic cloves - minced
1/2 cup harissa paste

Yoghurt sauce
1 cup yoghurt
Juice of one lemon
2 tbsp harissa

Instructions

Preheat the oven to 200 fan bake.

Chop the chicken into bite-sized pieces, and place into a bowl. Mix in the harissa, lemon zest & garlic.

Chop the capsicum & onions and then thread them & the chicken onto skewers (2 pieces of chicken per skewer + 2 pieces of capsicum & onion

Mix the yoghurt sauce together.

Drizzle the skewers with oil and season them then bake for 15 minutes or until cooked.
