Thai inspired chicken mushroom carrot koftas

Serves 3 - 4

Ingredients

200g button mushrooms
1 large carrot
5 garlic cloves
2.5cm piece of ginger
1 cup fresh coriander
Zest of 1 lime
1 tsp turmeric
500g chicken mince
1 tbsp sesame oil
1 egg
1/2 cup breadcrumbs

Instructions

Blitz the first 7 ingredients together in a blender until very finely diced. Then add the next 4 ingredients. Whiz together until everything is well combined.

Roll into golf ball sized ballllls, then ready a pan on low heat.
Add a good glug of oil and fry the balls, place the lid on and cook for 5 or so mins then remove the lid, flip the balls and simmer away until cooked.

Top with sweet chilli sauce (I used ) some fresh coriander, lime, chilli and toasted cashews.
