Tom yum chicken schnity with pickled cabbage & Tom yum Mayo.

Ingredients

This is going to be on repeat in my house, a sexy spin on the classic chicken schnitzel. It’s full of flavour and so crispy. The Mayo is so delicious you could make extra and use it on other dishes for the week.

1/4 white cabbage
1/2 cup rice wine vinegar
2 tbsp sugar
1/3 cup spring onions - thinly sliced

1 cup Mayo
1 heaped tbsp of Tom yum paste

4 chicken breasts - sliced in half
2 large eggs
2 tbsp Tom yum paste
2 cups panko crumbs
1/2 cup corn flour

Instructions

Shred the cabbage. Mix the rice vinegar and sugar, adding a pinch of salt. Pour the vinegar over the cabbage in a large bowl. Mixing well. Set aside.

Mix the Mayo and Tom yum together, set aside.

Slice the breasts in half so there are two thin breasts. whisk the egg and Tom yum paste together.

Dip the chicken pieces in the corn flour, then the eggs then the panko. Place on a lined tray and set aside.

Heat a couple of large pans with lots of oil on a low heat. When the oil is hot enough fry the chicken on both sides until crispy and cooked through.

Serve with a wedge of lemon, the pickled cabbage and a heap of Tom yum Mayo. Seriously YUMMMMMNM!!!
