Tom yum chicken schnity with pickled cabbage & Tom yum Mayo.
Serves
Shred the cabbage. Mix the rice vinegar and sugar, adding a pinch of salt. Pour the vinegar over the cabbage in a large bowl. Mixing well. Set aside.
Mix the Mayo and Tom yum together, set aside.
Slice the breasts in half so there are two thin breasts. whisk the egg and Tom yum paste together.
Dip the chicken pieces in the corn flour, then the eggs then the panko. Place on a lined tray and set aside.
Heat a couple of large pans with lots of oil on a low heat. When the oil is hot enough fry the chicken on both sides until crispy and cooked through.
Serve with a wedge of lemon, the pickled cabbage and a heap of Tom yum Mayo. Seriously YUMMMMMNM!!!
