10 minute Broccoli peanut chilli noods

Ingredients
This 10 minute meal is a tasty, spicy and might put you on your ass. So if you don’t like spice either use a mild chilli oil or swap it out for 1 tbsp of chilli oil & 1 tbsp of natural oil.
2 tbsp chilli oil
1 large garlic clove – minced
1 tsp grated fresh ginger
3 tbsp soy sauce
1 tbsp Chinkiang vinegar (Chinese black vinegar)
2 heaped tbsp of peanut butter
¼ cup udon noodle water
1 pack of udon noddles
1 cup broccoli – chopped into very tiny pieces
Handful of roasted peanuts – roughly chopped
Handful of thinly sliced spring onion
Instructions
Heat the oil in a pan on a medium/low heat. Fry the ginger and garlic.
Cook the udon noodles in boiling water.
Add the soy sauce, vinegar and peanut butter + 1 tbsp of the boiling water.
Add the broccoli and stir well for a minute or so. Add the udon noodles and about ¼ of a cup of the noddle water. Stir well and serve!
Garnish with the toasted peanuts and spring onions.
