Creamy harissa tomato pasta

Serves 4

Ingredients

400g dried fettuccine
One brown onion – thinly sliced
4 garlic cloves – thinly sliced
½ cup sundried tomatoes – very finely diced
2 tbsp harissa paste
1 can crushed tomatoes
Handful of basil
½ cup plump olives
1/2 cup parsley - chopped
½ cup cream

Feta to serve, basil, parsley & extra chilli flakes if you like

Instructions

Get a large saucepan of salted water boiling.

Fry the onion and garlic in 1 tbsp of extra virgin olive oil until soft. Season well with salt and pepper.

Cook the pasta as per the packet instructions

Add the sundried tomato and simmer for a few minutes. Add the harissa paste, stir well.

Add the canned tomatoes, add a splash of water into the can, swish it around and pour into the sauce add the basil and stir. Let it simmer away.

Add the olives, parsley, and cream. Stir well.

Then add the cooked pasta split into four bowls.

Add lots of feta, herbs and chilli flakes if you like.
