Roast Kumara and avocado herb salad

Ingredients
Handful of rocket
Roasted golden kumara
Roughly 1/2 cup toasted quinoa (sub for brown rice or anything else you have lying round)
Avocado
Red onion
Coriander, dill and parsley
Feta with truffle oil
Sprinkle of dukkah
Peas
Shaved raw Broccoli
Olives
Half a mandarin
A side of baked chicken breast
Instructions
Dress with whatever you have in the fridge, a good squeeze of lemon juice, a splash of extra virgin olive oil and some balsamic vinegar is a goer. I had leftover Caesar dressing which was FABU!
