Greek inspired salad with quinoa and watermelon
Serves 6-8
Ingredients
1 cup quinoa - cooked then cooled
1/4 of a small watermelon - diced
1/2 a large cucumber - diced
1 punnet cherry Tom’s - diced
1 large red capsicum - diced
1 red onion - diced
1/2 cup olives -
2 cups parsley - finely chopped
150g feta - cut into cubes
3 tbsp pickled jalapeño’s- diced
Bag of summer lettuce leaves - roughly chopped
Dress with: lemon juice, good quality extra virgin olive oil and balsamic vinegar.
Instructions
Cook the quinoa then cool it off in the fridge.
Mix the next 10 ingredients together in a bowl.
Fold in the quinoa and toss till well combined.
Dress with lemon juice, extra virgin olive oil and balsamic vinegar.
