Cucumber salsa with whipped feta

Serves 4

Ingredients

100g feta
1 garlic clove
1 tbsp extra virgin OO
1 cup Greek thick yoghurt

2.5 tbsp lemon Juice
2.5 tbsp extra virgin olive oil
1/2 a cucumber - diced
2 spring onions - thinly sliced
1 cup peas - defrosted
1 cup parsley - finely sliced
1 cup basil - finely sliced

Instructions

Whizz the feta, garlic and extra virgin in a blender until smooth. Spoon into a bowl. Stir in the yogurt. Set aside.

In a separate bowl whisk the lemon juice & oil together. Season with salt and cracked pepper. Add the remaining ingredients to the bowl. Stir well.

Smear the feta whip onto a plate, top with the cucumber salsa.

Drizzle with more olive oil and serve with crackers or as a side salad to your main.
