Za’atar tomato salad with grilled halloumi.

Serves 1

Ingredients

A perfect lunch for one - serve it with a toasted pita pocket on the size!

Handful of cherry tomatoes – quartered
3 baby cucumbers – roughly chopped
Handful of fresh mint leaves – chopped
4 olives – halved
1 heaped tsp of Za’atar
Drizzle of extra virgin olive oil
200g haloumi
Spoonful of storebought good quality hummus-
Handful of pickled onions

Instructions

Place the first 6 ingredients together in a bowl.

Fry the halloumi in a pan with a good splash of oil until golden on both sides. Slice it into smaller pieces.

Spoon the hummus onto the bottom of a plate, layer the salad, halloumi and top with the pickled onions.
