Garlicy cherry tomato pasta

Serves 4

Ingredients

400g dried fettuccine
10 garlic cloves - very thinly sliced
1/2 cup extra virgin Olive oil
1/4 cup of white wine
1 cup of parsley - chopped
1 tsp chilli flakes - diced
Zest of 2 lemons
1.5 cups grated Parmesan cheese
1/2-1 cup of pasta water
1 punnet of cherry tomatoes- halved
Chunks of feta cheese

Instructions

Prep all the ingredients for the pasta.

Ready a large pot of water with salt.

In a large pan heat the oil then add the sliced garlic and let it simmer on a very low heat for a few minutes.

Add in the zest, chilli, wine, and half the parsley & stir.

Get the dried pasta cooking in the boiling water as per the packet.Be careful not to burn the garlic it just needs to be nice and soft, once it’s soft you can take it off the heat until the pasta is done.

Drain the pasta, add it to the garlic oil, and stir in the rest of the parsley and all the Parmesan with some of the reserved pasta water to loosen it up.

Stir through the cherry tomatoes and sprinkle with chunks of feta.
