Beetroot Butterbean Hummus.

Serves 6

Ingredients

250g cooked beetroot
50g feta + a little more for garnish
2 tbsp tahini
1 large garlic clove
1 can butter beans – drained and rinsed
1 tbsp dukkah
2 tbsp extra virgin oo
Juice of 1 lemon
Salt and pepper

Instructions

Whizz together all of the hummus ingredients, spoon into a serving bowl and sprinkle over some extra dukkah, any fresh herbs you have and a few chunks of feta.

serve with toasted sourdough or herby crackers
