Broccoli pesto pasta

Serves 4

Ingredients

1 large head of broccoli
2 cups of basil
3 garlic cloves
1 large handful parsley
Zest of one lemon
1/3 cup extra virgin OO
3/4 cup ricotta
1 large zucchini - julienned

400g spaghetti
1/4 cup roasted pine nuts

Instructions

Blitz the broccoli in a food processor, then set aside.
Make the pesto with the basil, garlic, parsley, lemon zest, oil & s&p
Cook the spaghetti in boiling salted water.

Fry the pesto for 5 minutes, then add the broccoli and about 1/2 a cup of the boiling pasta water.  Sauté for about 6 minutes, stir in the zucchini and then the ricotta or yoghurt. Turn the heat off and add the pasta and serve.
Sprinkle the pine nuts on top and serve with Parmesan.

This goes perfectly on its own but I also love it with a piece of pan-fried fish.
