Cajun prawn, grapefruit and avocado salad
Serves
Toss the prawns with the cajun spice. Season and set aside.
Fry the prawns in a hot an with a god splash of oil until just cooked (DO NOT OVER COOK THESE BABIES) Set aside to cool.
Layer the salad ingredients, and top with the prawns. Squeeze the orange juice over the top and drizzle with a good-quality extra virgin olive oil
