Fish Crudo crackers with whipped an avocado
Ingredients
This is a bloody delightful starter. You can also serve the avocado mayo in one small serving bowl. The fish in another and let your guests help themselves. If you make these too far in advance the crackers will do soggy - and no one wants a sloppy cracker 😂
Zest of one large lemon
2 tbsp pickled jalapeños - finely diced
2 tbsp capers - finely diced
3 tbsp lemon juice
2 tbsp extra virgin olive oil
Cracked pepper
400g Fresh Trevally, kingfish or tuna - doced
1 large Avocado
1/4 cup kewpie mayo
1 tbsp lemon juice
Bark crackers to serve
Instructions
Mix the first six ingredients together in a bowl. Stir in the diced fish. Set aside.
Mash the avocado, then stir in the kewpie and lemon juice together. Season with salt and pepper.
If serving straight away then smear the avocado onto the bark crackers, top with the diced fish and HOOVER.
