Creamy salmon pasta for one

Ingredients

What better way to use leftover salmon than adding it to a 10 minute creamy pasta. I’ve said it before but god, how good is a zesty, creamy, garlic pasta. Mmm mmm sweeties.

100g dried pasta
2 large garlic cloves - crushed
Zest of half a lemon
1/3 cup cream
100g – cooked or hot smoked salmon
Big handful of baby spinach
Juice of half a lemon
Garnish Chopped Italian parsley, grated parmesan, chilli flakes.

Instructions

Cook the pasta in salted water.

Fry the garlic in a separate pan over a medium/low heat with a good glug of oil, add the lemon zest. Season well, stirring occasionally until fragrant and the garlic is soft.

Pour in the cream, stir and then add the cooked salmon, don’t over stir it. Add the baby spinach and the juice of ½ a lemon and then Add the cooked pasta, stir and then pour into a bowl.

Top with Italian parsley, lots of parmesan, cracked pepper, chilli flakes and some extra lemon juice if you like.
