Hot honey zesty butter salmon bowls

Serves 4

Ingredients

1.5 cup white rice

Hot honey buttery sauce:
75g butter
3 large garlic cloves – thinly sliced
1 tsp fresh minced ginger
Zest of 1 lemon
1 tsp chilli flakes
¼ cup lemon juice
¼ cup honey

4 fillets of fresh salmon
250g bag of broccolini

To serve: sliced spring onions & a drizzle of tamari over the rice before serving.

Instructions

Start with cooking the rice. Once cooked, set aside with the lid on.

Using a small saucepan over a medium/low heat, melt the butter, add the garlic and ginger, let it simmer away until the garlic is nice and soft. Add the lemon juice + zest and chilli flakes and season with salt and pepper.

Now add the honey, stir well and leave to simmer away for a few minutes.

Season the salmon fillet with salt and pepper. Heat a large pan with oil, once the oil is hot add the salmon skin side down, cook for a few minutes. Then flip it onto all three sides until perfectly cooked to your liking. Blanch the broccolini for 1 minute until just tender.

Divide the rice between four bowls, drizzle some tamari over the rice. Top with the salmon pieces, then pour over the buttery zesty sauce. Divide the broccolini evenly and then sprinkle the spring onions over the top and enjoy.
