Nectarine & peach salsa, avocado cream and chipotle fish tacos

Serves 4

Ingredients

Salsa:
2x nectarines - diced
2x peach’s - diced
1 medium red onion - finely diced
1/2 a red chilli - finely diced
1 cup coriander - chopped
2 tbsp lime juice
Salt & pepper

Avocado herb sour cream:
1 large avocado
1 garlic clove
1 cup of coriander
2 tbsp jalapeño’s
1 cup sour cream
1/4 cup lemon juice

Fish:
4 pieces of white fish
1/4 cup corn flour
1 tbsp dried chipotle
2 tsp paprika
8-10 small tortillas

Instructions

Mix the salsa ingredients together in a serving bowl.

Season with salt and pepper. Set aside.

Place the avocado herb ingredients together in a good processor. Blitz until smooth. Season with salt and pepper. Set aside in a serving bowl.

Mix the corn flour and spice together. Cover the fish pieces in the flour mix. Ready a fry pan with oil, on a medium/heat. Fry the fish pieces until lightly golden and cooked through on both sides.

Heat the tortillas in a pan. Set aside.

Let your guests help themselves to the tacos, fish, salsa and avocado herb sour cream.
