Salmon & avocado kumara toast with a herby ricotta spread

Serves Serves 2 for lunch or dinner

Ingredients

1 large golden kumara - sliced into 4 lengthways
1 tsp paprika

3/4 cup ricotta
1/4 cup pesto
Juice of half a lemon
2 tbsp kewpi mayo

1 fillet of hot smoked salmon
1 large avocado - sliced
Handful of parsley
1/4 of a red onion - pickled
A few Spoonfuls of the chunky bits from the chilli oil
Crunchy seeds on top

Instructions

Pre heat the oven to 190 fan bake, place the kumara onto a lined tray. Drizzle with oil, paprika and season with S & P.  Bake for 40 minutes.

Mix the ricotta, pesto, mayo and lemon juice together.

Spread the ricotta on top of the cooked kumara slices, add the avocado, salmon, parsley, red onion, chilli oil and seeds.
