Bacon and zucchini slice

Serves 4-6

Ingredients

3.5 cups grated zucchini
1 large brown onion – finely diced
2 slices of middle bacon
1 cup grated parmesan
½ cup parsley – finely chopped
1 tsp chilli flakes
1 tsp garlic powder
6 large eggs – whisked
1 cup self-rising flour

Instructions

Preheat the oven to 180 Fan bake.

Grate the zucchini, place it into a sieve and squeeze as much liquid out as you can. Set aside.


Slice the bacon into small pieces, finely dice the onion, grate the parmesan and chop the parsley.

Whisk the eggs into a large bowl. Whisk in the flour until smooth.
Now add the zucchini, onion, bacon, parmesan, parsley, chilli flakes, garlic powder + salt & pepper, mixing until everything is well combined.

Line a small baking dish with baking paper. Pour the mixture into the dish and bake for 40-45 minutes. You want the top just to be lightly golden.

Serve immediately with some tomato chutney.

Serves 4-6 with a side salad
