Jazzed up Shin Ramyun noodles

Serves 1

Ingredients

1 packet Shin Ramyun noodles
3 cups boiling water
½ a sachet of the noddle seasoning (add the whole thing if you love more spice)
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp Chinkiang vinegar / or rice wine vinegar
1 egg – boiled
1 carrot – Julienned
½ cup frozen peas
1 packet of dried veggies (from the noddle packet)
2 tbsp – sliced spring onion
Handful of fresh coriander

Instructions

Heat a small pot of water, add the egg and boil for 5 and a half minutes. Carefully peel the egg and set aside.


In a second pot add 3 cups of boiling water, then add the noodles, seasoning, soy, sesame and vinegar.


Stir well and let it simmer away for 3.5 minutes.


Add the carrots and peas, stir and leave to bubble away for a further minute.


Turn the heat off, stir in the spinach. Pour the soup and noodles into a large bowl.


Slice the egg in half, place on top of the noodles. Garnish with the dried veggie sachet, fresh spring onions and coriander.
