Cajun fish tacos & guacamole

One of my forever favourites and first recipes i ever posted on this page ♥️
Serves 4

Ingredients

4 large fillets of fresh white fish
1/2 cup cornflour
1/4 cup Cajun spice
1 lemon

Guacamole:
3 large avocados
Big handful of Italian parsley
Big handful fresh coriander
1/2 red onion - finely diced
1 red chilli - finely diced
Dash of red wine vinegar & extra virgin OO
Juice of 2 limes

To serve:
8 Mini taco shells, baby cos lettuce leaves, sliced cherry Toms, fresh coriander and parsley leaves, sriracha & kewpi Mayo mix.

Instructions

Mix the flour and Cajun spice together on a plate.

Slice the fish into 3 fillet. Coat each fish fillet well In the Cajun mix. Set aside on a plate.

Dice the avocados into small pieces. Add the onion, chilli. Roughly chop the herbs and add these in too. Season with S&P, add the vinegar, lime and olive oil. Stir well. Set aside.

Using two pans, Fry this fish in butter until lightly crispy on both sides, just before you flip the fish, squeeze some of the lemon juice over the top. Place the cooked fillets onto a serving plateD

If you have an open gas flame, or a third pan, brown the taco shells on both sides.

Put all the ingredients onto a serving platter and let everyone make their own tacos.
