Crispy smoked fish and Kumara cakes

Serves 4

Ingredients

500g smoked fish
2 large golden kumara – pealed & chopped
1 .5 cups coriander – chopped
3 spring onions – thinly slice the whole thing
Zest of 2 limes
Juice of 1 lime
1 egg
¾ cup panko crumb + extra to pat on the cakes before frying
Salt & pepper

Mix mayonnaise and Sriracha together for the dipping sauce.

Instructions

Preheat the oven to 200 fan bake.

Chop the kumara into 2cm chunks, drizzle with oil and salt and pepper and bake for 25-30mins until cooked.

Chop up the smoked fish, spring onions and coriander.

Mash the cooked kumara in large bowl. Add the lime zest, juice, egg, panko, spring onion, coriander and fish. Season and mix together with your hands.

Carefully roll the mixture into cakes of your desired size. Gently press them into a plate of the extra panko crumbs and fry on a low heat in some oil until crispy.

These are an easy & very tasty meal, if you are time poor, peal the Kumara and boil them instead of roasting. If you don’t have smoked fish. Sub it for canned tuna in spring water but be sure to throughly drain out the liquid from the can.
