Kingfish Crudo

Serves 6 as a Starter

Ingredients

1/4 cup very finely diced shallots
1/3 cup lime juice
1/2 cup mandarin juice
1 tsp sugar
1 tbsp chilli oil (ideally with chunky pieces in it)
300g fresh kingfish
3 tbsp fresh dill sprigs

Instructions

Combine the first five ingredients together in a bowl.

Slice the fish into roughly half a cm thick pieces.

Place the fish onto a serving platter then spoon over roughly 8 tbsp of the sauce.

Garnish with the sprigs of dill and season with salt and pepper.

Notre: keep the rest of the dressing in the fridge for a few days and either drizzle it over a salad or cooked green vegetables or you could add it to some pan fried piece’s of chicken and serve rice.
