Roasted kumara salad featuring a whole lot of goodness

Serves 4-6

Ingredients

1 large golden kumara
1 large red onion
1 tbsp maple syrup
Drizzle of sunflower oil
1 tsp dried oregano

Dressing:
1/3 cup olive oil
¼ cup apple cider vinegar
2 tsp Dijon mustard
2 tsp honey

1 large avocados – cut into chunks
1 bag of mixed buttery lettuce
1/4 cup toasted seeds
1 orange – sliced into segments
1 cup fresh basil and coriander – roughly chopped
100g feta cheese – crumbled

Instructions

Preheat the oven to 190 fan bake.


Chop the kumara into small chunks and the red onion in half and then into quarters.
Drizzle with sunflower oil and maple syrup. Sprinkle over the oregano and season well. Bake for 30 minutes.

Whisk together the dressing ingredients and season well.

Chop the lettuce up and add to the bowl with the herbs.
Once the kumara and onion are cooked let is cool add the orange, avocado, kumara, red onion, and feta. Top with the seeds.

Serve with the dressing in a small bowl and let everyone help themselves.
