Salmon with an avocado herb salsa

Serves 6 - 8

Ingredients

1.2kg fresh side of salmon
Juice of 1 large lemon (nearly ½ cup)
1 tbsp cumin seeds
1 tbsp paprika
2 tbsp honey

1 cup coriander – very finely chopped
1.5 cups Italian parsley - very finely chopped
1 large shallot – thinly sliced
2 tbsp capers – chopped
1 garlic clove – minced
½ punnet of cherry tomatoes – finely diced
¼ cup extra virgin OO
1 tbsp red wine vinegar
2 large avocados
½ large red chilli – diced

Instructions

Pre heat the oven to 200 fan bake.
Place the salmon onto a lined baking tray. Mix the next 4 ingredients together in a small bowl. Pour over the salmon and then season the fillet with salt and pepper.
Bake for 15 minutes or until cooked to your liking.

Mix the coriander, parsley, shallot, capers, oil, vinegar capers, garlic and tomatoes together in a bowl. Season with pepper and stir well. Dice the avocados into medium sized pieces. Very gently, fold the avocado into the bowl with the herbs.

Carefully place the cooked salmon onto a serving platter, let it cool slightly.

Pour the avocado herb salsa over the top of the salmon. Sprinkle some fresh red chilli over the top .

Enjoy with some crispy roasted potatoes and a big salad.

Note - I have created a beautiful baked salmon recipe topped with the most flavoursome avocado salsa that can be enjoyed this Christmas, the salmon doesn’t have to be served hot, so you can make it in advance as  well as the avocado salsa and put it together just before serving. The avocado salsa is packed full of flavour and is sure to be a hit this Christmas!
