Soba & carrot noddle pesto situation with garlic salmon

Serves 2

Ingredients

One bunch of soba noodles
2 carrots - julienned
3/4 cup basil pesto
Zest of 1 lemon
Juice of one lemon
1/2 cup peas
Big handful of chopped Italian parsley

2 pieces of salmon
1 garlic clove - minced
Salt and pepper
Garnish with Feta and toasted pumpkin & sub flower seeds

Instructions

Ready a pot of boiling water. Heat the oven to the fan grill. Cover the salmon pieces in the minced garlic salt & peppers & a drizzle of oil.

Bake the salmon pieces for 7 minutes or until cooked to your liking.

Cook the soba noodles for 4 mins, then add the carrots and peas for a further minute. Drain well and stir through the pesto, lemon zest, juice and most of the parsley.

Divide the noddles between the plates, place the salmon on top and then garnish with feta, seeds and the remaining parsley.
