Tuna Tostada
Serves 2
Ingredients
2 cups sashimi Tuna
1/2 Red onion, finely sliced (I just used less than a 1/4 onion)
¼ cup Sweet corn kennel
¼ cup Cucumber, finely chopped
¼ cup Coriander
2 tbsp Wasabi mayo
2 tbsp French dressing
1 tbsp Jalapeño, finely chopped (I used extra as garnish so chop a few more)
4 mini flour tortillas
French Dressing
1 tbsp Dijon mustard
2 pinch ground Black pepper
½ cup Olive oil
½ cup White wine vinegar
3 pinch Sea salt
(It makes lots of dressing so put it in a jar and save it for a salad ♥️)
Wasabi Mayonnaise
½ cup Japanese mayonnaise
1 tbsp Wasabi paste
Instructions
Heat the oven to 180 degrees fan bake, brush both sides of the tortilla with oil, bake for five minutes each side so they are crispy but not burnt
Combine tuna, jalapeño, and French dressing in a bowl, season to taste with sea salt and refrigerate for 15 minutes to marinate.
Spread a large spoonful of wasabi mayonnaise over a tostada shell.
Sprinkle on mixed tuna, sweet corn, cucumber, red onion and coriander. Eat immediately.
