Wasabi broccoli mash with salmon and mango salsa

Serves 2

Ingredients

1 head of broccoli
3/4 cup peas
3 garlic cloves - roughly chopped
1 tsp of sesame oil
Wasabi to taste (I use about 1.5 tsp)
3 tbsp lemon juice
3 tbsp yoghurt

Salsa:
1/2 a juicy mango - diced
1/2 an avocado - diced
1/4 red onion - diced
Juice of 1 lemon
Handful of coriander - chopped
1 mild red chilli- diced

2 pieces of salmon - skin on

Instructions

Chop the broccoli into small florets. Boil a saucepan of water,add the broccoli for about 3-4 mins, then add the peas for 1 minute.

Fry the garlic for a minute in a seperate pan with some sesame oil. Drain the broc and put in the food processor with the yoghurt, lemon juice, wasabi and garlic. Whizz it together and then pour it back in the pot with the lid on to stay warm.

Mix the salsa ingredients together in a bowl, season and set aside.

Fry the salmon skin side down first until crispy, season the flesh and then flip and cook to your liking.

Spoon the mash on the bottom, then the salmon and the salsa on top.
