Thai Beef Salad
Ingredients
2 pieces of steak
1 Baby cos lettuce (our leaves chopped)
1/2 punnet of cherry tomatoes - halved
1/2 Large sweet red pepper - finely sliced
Half a cucumber - remove the seeds and thinly slice
1 small avocado - sliced
Half a large red onion - finely sliced
1 cup coriander - chopped
1 cup fresh mint - chopped
1/4 cup Thai basil - chopped
Dressing:
3 tbsp lime juice Lime juice (add more if you like it more tart)
3 tbsp fish sauce
1.5 tbsp sugar
Fresh chilli (very finely diced)
Peanuts - chopped to garnish
Instructions
Marinate the steak in a few splashes of fish sauce & pepper.
Chop all of the salad ingredients and combine in a bowl.
Mix the dressing ingredients and pour over the salad.
BBQ or pan-fry the steak, until cooked to your liking.
Let it rest for 10 minutes and then slice and mix in with the salad.
