Tom Yum Salmon Noodle Salad

Serves 4

Ingredients

3 tbsp Tom yum paste
Juice of one really juices lemon
4 fillets of salmon

3/4 cup fresh orange juice
2 tbsp rice wine vinegar
1 tbsp sugar
2 tbsp fish sauce
1/2 red onion - thinly sliced

2 carrots - julienned
1 large courgette - julienned
2 cups Cos lettuce - thinly sliced
1 red capsicum - thinly sliced
1 cup fresh mint - leave them whole

180 g - dried udon noodles
Garnish with lime zest, lime juice and fresh red chilli

Instructions

Pre heat the oven to 200 fan bake.
Mix the Tom yum and Lemon together, add the salmon. Set aside.

Mix the next 4 ingredients together in a bowl, add the sliced onion. Set aside.

Prep all the salad ingredients and throw into a bowl.

Get the noodles cooking as per packet instructions, once cooked, drain and run under cold water to cool.

Cook the salmon for 10-12 mins, Pouring all the marinade ingredients over the top.

Mix the noodles in with the salad.

Pour the pickled onion and dressing over the salad and mix.

Add the cooked salmon on top and garnish with lime zest, chilli and lime juice.
