Asian Crispy Prawn & Mandarin Noodle Salad

Serves 6 - 8

Ingredients

4 mandarins – juiced (flesh and all)
2 tbsp fish sauce
2 tbsp chill oil
1 tbsp sugar
¼ cup lime juice

¼ red cabbage
3 bunches of bok choy – sliced into 1cm slices
2 spring onions – thinly sliced
2 red capsicums - thinly sliced
1 cup of coriander or mint – chopped
3 mandarins – peeled and split into individual segments

1 packet of dried soba noodles
1 cup frozen peas

1kg bag of raw prawns – defrosted and patted dry
1/3 cup corn flour
1 tsp Chinese 5 spice
1 tsp garlic powder
1 tsp white pepper
Garnish with fresh red chilli & fresh chives (optional)

Instructions

Whisk the first 5 ingredients together and set aside.

Slice the vegetables and set aside.

Cook the dried noodles as per the packet instructions, at the last minute add the peas. Drain and run under cold water to cool.

Coat the prawns in the garlic powder, 5 spice, corn flour and 1 tsp of white pepper. Stir well so the prawns are evenly coated.

Heat a large pan over a medium heat, add enough oil to coat the bottom of the pan. When the oil is hot add the prawns. You will need to do this in batches. Turning the prawns once they are crispy. Set aside.

Now add the noodles to a large bowl (you might need to run the noodles again under cold water to loosen up (drain well). Add the vegetables, tossing it altogether.
Top with prawns. Pour over the dressing and garnish with the chives and extra chilli (if using)
